Homemade Spicy Fall Granola

 - 2 cups oats (or quinoa flakes, or other grain of choice)

- 1 cup buckwheat groats (kasha)

- 1 cup dessicated coconut or coconut flakes

- 3 tbsp of chia seeds

- 1/4 cup of cashews

- 1/3 cup of dried cranberries

- 1 tsp of cinnamon

- 1 tsp of pumpkin pie spice

- 1 tsp of ginger

- 1 tsp of nutmeg

- 1 pinch of salt

- 1 tbsp of vanilla

- 2 tbsp of melted coconut oil

- 2 tbsp of maple syrup 

 

 

*preheat oven to 325 degrees 

*melt coconut oil and maple syrup in small bowl in microwave (30 seconds) and then add in vanilla

* mix all other ingredients together in a large bowl

* drizzle and mix in liquid ingredients mixture

* spread evenly on parchment lined tray (thin and even layer)

*bake for 15 minutes and then mix with a spatula

*then continue to check at 5 minute intervals after until a nice golden color has been reached

*allow to cool and pop it into a jar to keep in cupboard 

ENJOY on top of yogurt, fruit, or even just as a snack!
