Here is the quickest easiest cookie you ever made...
A great on-the-go breakfast OR even a healthy curb to your evening sweet tooth
Simple basic foundation..2 ingredients - THAT'S IT!
Oatmeal and Bananas
Then add in whatever healthy mix-in's you'd like!
2 bananas (mashed)
2 cups oatmeal
1/4 cup of each mix-in (eg. dried fruit, nut pieces, dried coconut shreds, chocolate chips/cacao nibs, etc...get creative!
Mash bananas in a bowl
Mix in oatmeal
Fold in mix-in's if desired
Preheat oven to 350 degrees F
Drop cookie dough in 2 tablespoon rounds on parchment lined cookie sheet
Bake 13-15 minutes until golden
