Blender Greek Yogurt Oat Muffins

Ingredients:

  • 2 cups oats (option to grind one cup of these into oat flour)

  • 2 large ripe bananas

  • 2 large eggs

  • 1 cup plain greek yogurt

  • 2 tablespoons honey

  • 1.5 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon vanilla

  • 1/8 teaspoon kosher salt

  •  1/2 cup mix-ins: chocolate chips, blueberries, raisins, nuts, etc

 

 

 

Directions:

  1. Preheat oven to 400 degrees.

  2. Prepare a muffin tin by lightly greasing or w/ liners.

  3. Place all ingredients but the mix-ins in a blender and blend on high. (stopping to scrape down the sides as needed) until the batter is smooth (~3minutes)

  4. With a spatula, fold in the mix-ins. 

  5. Divide the batter between the prepared muffin cups, filling each no more than 3/4.

  6. Bake for 15 minutes or until the tops of the muffins are set and the toothpick comes out clean.

  7. Let muffins cool on a a wire rack for 10 minutes

  8. Yum! So simple and so easy to clean just one blender :)
