Bananas are a nutritional powerhouse: high in Vit B6, potassium, fiber, manganese, vit C, biotin, and copper...AND super filling as well! The best thing about bananas is its versatility: they taste delicious in any baked goods, you can top them on top of pancakes or cereal, freeze them to make smoothies or nice-cream, make banana oatmeal cookies (see previous recipe)...you name it! Today we're going to make a healthy banana bread recipe -- no oil involved!
⅓ cup apple sauce
½ cup honey or maple syrup
1 cup mashed ripe bananas (about 2½ medium or 2 large bananas)
¼ cup milk
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon ground cinnamon
1¾ cups white whole wheat flour
½ cup chopped walnuts
Preheat oven to 325 degrees F and grease a 9×5-inch loaf pan.
In a large bowl, beat the oil, honey, eggs, mashed bananas, and milk.
Add the baking soda, vanilla, salt, cinnamon, and flour, and whisk until combined. Fold in walnuts at this time.
Pour the batter into your greased loaf pan and sprinkle lightly with cinnamon.
Bake for 60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the loaf pan for 10 minutes, then transfer it to a wire rack to cool for 20 minutes before slicing.
